Eggs are fresh and unwashed. Simply wash with hot water before use. Always refrigerate washed eggs. $1 extra per dozen and we can wash for you, please ask in advance.
We have a bantam flock that lays small and medium eggs. And newly laying large size hens produce pullet eggs for a month or two. Smaller eggs have similar sized yolks to large eggs and less egg white. So smaller eggs are higher in nutrients and protein.
Use medium eggs 1 to 1 in place of large eggs. Can add one or two extra medium or small eggs to recipes for richer taste. Use small eggs at a 2 to 1 ratio in place of large eggs for a richer taste.
