We're looking for a fearless leader for the kitchen of our new-ish bar and all-day café. Hitchcock Deli, our eight-year-old quality neighborhood delicatessen, expanded with fifty seats, a 30 foot bar, a beautiful space and full service all day. The original deli is now focused on superlative coffee, sandwich/salad grab and go, and curated retail. Bar Hitchcock has great cocktails, a dozen wines by the glass, beers on tap and tasty food all day.
We are seeking an experienced all-around kitchen pro who has an equal interest in leading a team of pastry and line cooks, cooking or expediting a busy brunch, lunch or dinner service, receiving and handling organic produce fresh from our farm, preserving fruits and vegetables, smoking/curing meats, ordering from a network of small farms and fine foods purveyors, and working with a dedicated management team to provide excellent hospitality in a casual environment where the details matter.
Menu development will be overseen by Hitchcock Restaurant Group Culinary Director as well as Chef/Owner, but we'll want to hear your input as well. We will bring menu concepts, standardized recipes and an infrastructure that includes a commissary with daily deliveries and a full farm program. You'll be motivated to manage a small but powerful team, maintain a high standard of cleanliness and organization, be receptive to coaching by your managers, and have a keen and genuine interest in Pacific Northwestern cuisine.
