For sale are several premium handmade Japanese knives from my collection. These have all been barely used and have not been sharpened beyond the original edge yet. I have several Japanese stones and good technique and can sharpen for you if desired. I have quite a few knives and simply need to thin the herd. These ones are fantastic but I have more than I can even use, so have the luxury of picking favorites. I can provide a borderline annoying amount of information on each if you'd like, and I'm happy to take more pictures or send a cutting video. More information on each below:
1) Shigeki Tanaka 240mm gyuto: This one is ground extremely thin. Ginsan stainless core clad in stainless nashiji. Beautiful ebony and horn handle that balances well. Perfect edge, gentle belly, 242x51mm dimensions. This was one of the Knives and Stones special edition models with hand picked grinds and extra fit and finish work. Asking $200.
2) Shigeki Tanaka 180mm gyuto: SOLD
3) Ashi Hamono 180mm gyuto: White 2 monosteel takes a crazy sharp edge. Ashi knives are forged in Sakai which measure from the handle rather than the edge, so dimensions are 172x39mm which functions like an oversized petty or small gyuto. It is a very versatile size and shape for those who prefer smaller knives. Ho wood and horn handle is light and balances well with the light blade. Ground very thin with a right side slight convexity, these cut very well. Asking $175.
